  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup milk (whole or 2%)
  • 2 large eggs
  • ½ cup onion (finely diced)
  • 3 cloves garlic (minced)
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp thyme

Tangy Glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar

Instructions

Step 1: Preheat & Prepare

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a loaf pan or line a baking sheet with parchment paper.

Step 2: Mix the Meatloaf

  1. In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, Worcestershire sauce, salt, pepper, paprika, oregano, and thyme.
  2. Mix gently with your hands or a spoon until just combined (overmixing can make the meatloaf dense).

Step 3: Shape & Bake

  1. Transfer the meat mixture to the loaf pan or form a loaf shape on the baking sheet.
  2. Bake for 40 minutes uncovered.

Step 4: Prepare & Add the Glaze

  1. While baking, whisk together ketchup, brown sugar, Dijon mustard, and apple cider vinegar in a small bowl.
  2. After 40 minutes, spread the glaze evenly over the meatloaf.
  3. Return to the oven and bake for 15-20 more minutes, or until the internal temperature reaches 160°F (71°C).

Step 5: Rest & Serve

  1. Let the meatloaf rest for 10 minutes before slicing to retain juiciness.
