Essential Ingredients

  • 2 cups basmati rice (cooked and cooled, preferably day-old rice)
  • 4 large eggs
  • 2 tablespoons oil (ghee or sesame oil for authentic flavor)
  • 2 green chilies (finely chopped, adjust for spice level)
  • 1 tablespoon garlic (minced)
  • 1 teaspoon ginger (minced)
  • ½ teaspoon black pepper (freshly ground)
  • 1 tablespoon soy sauce
  • 1 teaspoon vinegar (white or rice vinegar)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon sugar (optional, for balance)
  • ¼ cup spring onions (chopped, for garnish)
  • 1 tablespoon cilantro (chopped, for garnish)

Instructions

1️⃣ Prepare the Rice

  • Cook 2 cups of basmati rice and let it cool completely.
  • If using fresh rice, spread it on a tray and refrigerate for 30 minutes to remove moisture.

2️⃣ Scramble the Eggs

  • Heat 1 tablespoon of oil in a wok or large pan over medium-high heat.
  • Crack 4 eggs, season with a pinch of salt, and scramble until fluffy.
  • Remove the eggs and set them aside.

3️⃣ Sauté Aromatics

  • In the same wok, add 1 tablespoon of oil, then toss in green chilies, garlic, and ginger.
  • Stir-fry for 30 seconds until fragrant.

4️⃣ Add the Rice & Seasonings

  • Increase heat to high, add cooked rice, and toss continuously for even coating.
  • Stir in black pepper, soy sauce, vinegar, salt, and sugar.

5️⃣ Combine & Serve

  • Add the scrambled eggs back into the pan and toss well.
  • Garnish with spring onions and cilantro.
