Ingredients
✔ 1 ½ cups Amish dried corn (e.g., Cope’s Dried Sweet Corn)
✔ 2 cups whole milk (or half-and-half for extra richness)
✔ ½ cup heavy cream
✔ 2 tbsp unsalted butter
✔ 1 small onion, finely chopped
✔ 1 tbsp sugar
✔ ½ tsp salt (adjust to taste)
✔ ¼ tsp black pepper
✔ Fresh chives or parsley for garnish (optional)
Instructions
1️⃣ Soak the Dried Corn
- Place Amish dried corn in a bowl and add milk & heavy cream.
- Cover and let it soak for at least 4 hours or overnight.
2️⃣ Sauté the Onion
- In a large skillet, melt butter over medium heat.
- Add chopped onions and sauté until soft and translucent (about 3 minutes).
3️⃣ Combine Ingredients
- Add the soaked corn mixture to the skillet with onions.
- Stir in sugar, salt, and black pepper for extra flavor.
4️⃣ Simmer to Perfection
- Reduce heat to low and let it simmer for 15-20 minutes, stirring occasionally.
- The corn will absorb the liquid and become creamy & tender.
5️⃣ Garnish & Serve
- Remove from heat, garnish with fresh chives or parsley, and serve warm!
